I. What is GMP?
1. The GMP standard stands for Good Manufacturing Practices. It ensures safe conditions for production. GMP is a fundamental part of management systems for food safety, and is a prerequisite for the development of HACCP standards and the management for food safety standard, ISO 22000.

2. GMP requirements:
–  Buildings and equipment: for high quality in workshop and processing areas, food handling, sanitation facilities, means of lighting, ventilation, equipment and tools, system safety in emergencies, control and hygiene, clean factory buildings, waste treatment, storage of hazardous chemicals, and personnel;
–   Processing control: for raw materials and production;
–   Human control: for health requirements, isolate the source of infection, personal hygiene, education, and control;
–  Transport and storage: for the finished products.
II. Obiects of Application.
GMP is applied in areas of production, and product processing requirements, for instance:
–  Sanitary conditions.
–  Food.
–  Pharmaceutical.
–  Cosmetics, and.
–   Medical equipment.
The Ministry of Health in Vietnam has declared the GMP standards compulsory to apply on all establishments producing, processing and food businesses. Including restaurants and hotels.
III. Benefits.
Applying the GMP standards will improve basic and comprehensive safety and hygiene conditions of production facilities and activities as well as meet the requirements of the law on sanitary management of food. In addition, some other benefits include:
